Description Bay Catering use the traditional way of hog roasting using lumpwood charcoal & smoked oak shavings and of course our secret rubs. Traditional roasting is rare these days with most companies opting for gas roasters. Traditional roasting is a bit more work but the spectacle and aroma far surpasses anything else. All our hogs are farm raised. Most people, through no fault of their own, tend to think a whole pig takes a couple of hours to cook. Not so! from lighting the coals to carving an average 60kg pig will take around 12 hours. |
